Spicy Falafel

This dish originates from Arabic cuisine and is internationally popular especially as a snack.

Recipe idea: Spicy FalafelFor this, you will need the following ingredients:

250 g dried peas (green or yellow; alternatively dried broad beans or dried chickpeas), 2 onions, 2 garlic cloves, ½ bunch parsley, ½ bunch fresh coriander, 1 tsp ground coriander, 1 tsp ground cumin, 1 tsp sweet paprika powder, salt, 1 tsp baking soda (alternatively baking powder), 750 ml oil for frying

Preparation

  1. Place legumes into a bowl and cover with water to soak overnight. 
  2. The next day, peel and coarsely chop the onions and garlic. Rinse the herbs, shake them dry, and pluck off the leaves. Drain the peas in a sieve and place them into the food processor. Add onions, garlic, and herbs and chop everything as finely as possible. 
  3. Mix spices and 2 tsp salt with baking soda or baking powder and add to the falafel mixture. Mix thoroughly and form approx. 40 balls. They cannot really be rolled; rather, press the mixture into shape between your hands.
  4. Heat oil well in a wide pot. The oil is hot enough when small bubbles immediately form on the handle of a wooden cooking spoon. Fry the balls in batches for 4–5 mins until golden brown. Remove with a slotted spoon and drain on kitchen paper.
