Crispy pastry rolls filled with cheese on a slate plate, garnished with fresh herbs.

This dish originating from Turkey is eaten for breakfast and served warm. Usually accompanied by yogurt or salad and rounded off with a typical Turkish black tea.

Recipe idea: BörekYou'll need the following ingredients for this:

10 sheets of yufka pastry (Turkish store), 250 grams feta cheese, 1/2 bunch parsley, oil for frying

Preparation

  1. Cut the Yufka sheets lengthwise down the middle. Instead of initially having 10 sheets, you now have 20 pointed triangles in the shape of cones. Slightly moisten each pastry sheet with your fingers using a little water (this helps the dough stick together better).
  2. Chop parsley finely and thoroughly knead it together with the feta cheese. Place a walnut-sized portion of the cheese mixture onto the widest end of each pastry triangle and firmly roll up the dough from the broad end towards the tip. Press the tip firmly again with moist fingers.
  3. Fry all böreks in a pan with plenty of oil for approximately 7 – 8 minutes until golden brown, turning them several times.
